Leftover Rice Part V

Rice and Moong dosa can also be made with leftover rice. Soak 2 parts of moong dal and 1 teaspoon fenugreek seeds in warm water. It will become tender in 2-3 hours. Wet grind the moong dal and rice separately. Now mix the 2 and keep it aside. Wet grind required amount of green chillis, 1 cup grated coconut, 1 teaspoon cumin seeds, 1 bunch green coriander, 2-3 sprigs curry leaves, 5-6 sprigs mint and 2 spring onion with leaves (optional). Mix this with the batter and add required amount of salt. Make dosa and sprinkle finely chopped onion on it. This dosa can be had instead of chappatis during lunch and dinner. This can be served with or without chutney.

The same batter can be used for making moong bhajia also. Add chopped onions to the batter and make bhajias. Bhajias can be used as snacks.
