How to Reuse Previous Night’s Rice – Part I

Many times it so happens that somebody in our family ate less or did not have anything at night. Thus some of the rice that we had cooked that night remains. Some of us would decide to throw the remaining rice. When there are so many people going without food, it would be a sin to throw food away. Instead we can convert this into a delicious beverage the next day. This recipe is especially good for summer. It is healthy as well.

This is what we suggest you do: Pour some water into the vessel containing the rice and refrigerate it overnight. Next day separate the water and keep it aside. Grind the rice into a smooth paste. Add the water that was separated out. Place a kadai on the stove, which is on. After it is sufficiently heated add a little oil. Sprinkle in sequence some mustard, cumin seeds, fenugreek seeds, 2-3 green chillies, a little asafoetida, a little turmeric powder and 2 tablespoons each of finely chopped coriander leaves, curry leaves and mint leaves. Stir for a minute and add the rice mixed with water. Add salt to taste. Place the mixture on a low flame for 2 minutes and switch off the gas.

This gruel can be had as a hot beverage, at room temperature or chilled (for 10 minutes). If you wish, you can add butter milk as well to it.
