Leftover rice can be used to prepare rice and dal adai. Soak 1 part leftover rice separately and 2 parts tuar dal, 1 part chana dal, 1 part moong dal and 1 part peanuts separately in warm water for 2-3 hours till tender. Wet grind both separately and mix to place it aside. Add required amounts of red chilli powder, cumin seeds, pepper powder, 1 grated coconut, 1 bunch of finely chopped coriander and 5 sprigs of curry leaves. Check the measure of the batter with all the ingredients till now. Add ½ the measure of the batter of grated carrots. Mix and add salt to taste. Roast in ghee or oil (or both mixed) on a tawa like an utappa. Adai can substitute chappati during lunch or dinner.
The same batter can be used for vadas. Add ½ the measure of grated onion and ¼ part of grated cabbage to the batter. Add enough gram flour to make vadas. Apply oil to clean hands and make vadas on them and fry. Vadas can be had during snack time.
