Food Recipes for Kids with Tantrums (Part II)

Whole Wheat Salad Wrap

Ingredients:

For the salad:

  • ½ cup tomatoes, thinly sliced
  • ½ cup spring onions, sliced
  • ½ cup carrot, cut into thin strips
  • ½ cup bean sprouts
  • 1 cup lettuce, shredded
  • 2 tbsp finely chopped coriander
  • 2 tbsp finely chopped mint
  • ½ tsp roasted cumin powder
  • Juice of ½ lemon
  • 1 tsp olive oil
  • Salt to taste

Method:

For the salad:

  1. Combine all the vegetables and bean sprouts in a bowl and refrigerate for at least 30 minutes.
  2. Just before serving, add the cumin powder, lemon juice, olive oil and salt and mix well.

For the Rolls:

  1. Place one left-over chapatti on a clean surface
  2. Spread an even layer of chutney on the chapatti.
  3. Top up with a generous portion of salad in the center of the chapatti and roll up tightly.
  4. Repeat to make more wraps.
  5. Serve immediately.

Soy Upma

Ingredients:

  • ¾ cup soy granules
  • 1 tsp cumin seeds (jeera)
  • 1 tsp urad dal (split black lentils)
  • 1 tsp grated ginger
  • ¼ tsp asafoetida (hing)
  • 1 to 2 green chillies, slit
  • ½ cup onion chopped
  • ½ cup carrots grated
  • ½ cup cabbage, chopped
  • 2 tsp oil
  • Salt to taste

For the garnish:

  • 2 tbsp chopped coriander
  • 4 lemon wedges

Method:

  1. Soak the soya granules in hot water for approximately 15minutes. Drain, squeeze out all the water and keep aside. Discard the water.
  2. Heat the oil in non-stick pan and add the cumin seeds. When they crackle, add the urad dal and sauté till dal turns light brown.
  3. Add the asafoetida, ginger, green chillies and onions.
  4. Sauté the onions till they are translucent. Add the carrots and cabbage and sauté for 4 to 5 minutes.
  5. Add the soya granules and mix well.
  6. Season with salt and mix well
  7. Serve hot garnished with the coriander and lemon wedges.
