Ingredients:
Granny Smith Green variety apple from the Washingtion Apples collection – 3/4 from a big one.
Gooseberries (Amla) – 3.
Tomatoes – 3 medium-sized.
Green chillies turning red – 4.
Ginger – 1 inch piece.
Cumin seeds – 1 teaspoon.
Fenugreek seeds – 1 teaspoon.
Flax seeds – 1 teaspoon.
Garam masala – 1 teaspoon.
Black pepper – ½ teaspoon.
Oil – 3 teaspoons.
Basmati rice – ¼ kg.
Sugar – ½ teaspoon.
Salt – to taste.
Coriander and mint for garnishing.
Method: Cook basmati rice as you would do for pulao. Each strand should be separate. Grate apple, amla and ginger. Chop tomatoes into small pieces. Split green chillies length-wise.
Heat oil in a kadai and sauté cumin seeds, fenugreek seeds and flax seeds. Add green chillies and black pepper. Add tomatoes. Sauté for 2 minutes. Add grated apple and amla. Sauté for 3 minutes. Add salt, garam masala and sugar. Mix basmati rice and serve after garnishing with coriander and mint.
Serves: 4 persons in lunch with roti, etc. Otherwise 2-3 persons depending on their appetite.
