Leftover rice can be made into coconut + sesame rice. Take grated coconut as much as there is leftover rice. Also take the same amount of finely chopped onion. Take 1/3 cup of white sesame. Dry roast the white sesame in a preheated kadhai and place it aside. Deseed enough green chillies required for the rice, coconut and onion.
Pour some coconut oil, sesame oil or any other cooking oil in a preheated kadhai. Add ½ teaspoon mustard, 3/4 teaspoon cumin seeds, 3/4 teaspoon fenugreek seeds, 2 sprigs curry leaves, 1 teaspoon white udad dal and 2 teaspoons of chana dal. Sauté the mixture and add the green chillies. Stir well and add onion. When onion is transparent, add sesame. Stir well and mix rice into it. Add salt to taste.
Add coconut to the rice mixture and stir well. Garnish with finely chopped bunch of coriander leaves and 2 sprigs of mint leaves. Mix well and switch off the stove. Serve with thick curd. You can have all the side dishes had with white rice, with this dish as well.
