Leftover rice can be made into salted spheres. Dry grind leftover rice and add grated coconut as much as the leftover rice. Add as much salt as required. Add a finely chopped bunch of coriander leaves, 4 sprigs curry leaves and 4 springs mint. Place this aside.
Dry roast and coarsely grind 2 fistfuls of cashew nuts. Add this powder in the rice. Dry roast and finely grind 1 ½ teaspoons of cumin seeds. Add this powder to the rice. Finely chop 5-6 deseeded green chillis and mix it with the rice.
Make spheres out of the rice mixture. Steam cook these spheres on idli plates. Serve with coconut chutney.
